2019 VINTAGE CUVÉE
Mornington Peninsula Chardonnay (55%) and Pinot Noir (45%) all hand-picked and whole bunch pressed and with primary fermentation in old French barriques. Barrel fermented and made in the traditional method in this bottle, the wine spent over 3 years on lees.
This sparkling wine is glistening gold in colour. Aromas of florals, citrus and brioche fill the glass. The citrus flows onto the palate, accompanied by buttered toast, honey and nuts . The fine, creamy mousse is framed by toasted brioche derived from its extended time on lees. The palate is long, clean and dry with creaminess balancing out the acidity.
