2020 Trinity - Trinity is a blend of Pinot Gris, Riesling and Gewürztraminer made in the style made famous in Alsace. This dry white wine blend is fresh and flavourful. Very aromatic, the wine explodes out of the glass. Scents of lychee, rose petal, Turkish delight and ginger are matched by an equally complex and full palate that displays fresh and preserved lemon, rose water, stone fruit and spices. The finish is dry and refreshingly nuanced that has you reaching for another sip.
2019 Riesling - A nose lifted and exotic nose of rose petal, candied orange and hints of lavender, as it opens in the glass more complex notes of lychee and spice are apparent. This complexity reveals the influence of wild ferment and small parcels of oak fermentation.
A layered and rich palate, tempting flavours of lemon and roses, touches of spiced apples and lime leaf, and a creaminess that comes from natural fermentation. 2018 Chardonnay - Rich, complex and toasty classic chardonnay. Notes of nectarine and peach balanced by toast, honey and cream. Full bodied but beautifully structured with fresh acidity reflecting the cool Mornington Peninsula climate.

Oasis (goat) - The goat cheese is very light and fresh in flavour with an almost fluffy interior. The cheese is coated in chives with a little garlic.
Beach Box Brie (cow) - Wonderfully rich and creamy brie, made with golden Jersey milk, this cows milk brie has a light bloomy rind and pronounced French flavour.
Horizon (goat) - This pressed, firm textured goat cheese has a wonderful, mild flavour and features a line of ash through the centre. The rind is subtle and mild flavoured and as it ages, this cheese oozes a little under the rind.
Tomme Bouy (buffalo)- A semi hard alpine style buffalo cheese sporting a natural rind. It has a mild nutty taste and crumbly texture
Persian Feta (goat) - goat feta is slowly set to enable the full flavour of the goat milk to come through, without being ‘goaty’ or gamey’. The texture of the cheese is smooth and spreadable with a fresh and light flavour.
