Rahona Valley is bringing guest chef Dave Bain to Red Hill for the Winter Wine Weekend across the Queen's Birthday long weekend.
A head chef with 20 years in the industry, Dave has worked at hatted restaurants in Melbourne and around the world and is seriously obsessed with American-style barbeque and smoked meats.
He will be cooking up a primal feast: whole suckling pig crackling over a fire pit,and smoked American-style beef brisket, served in brioche buns with pork jus, charred apple chutney, roasted corn salsa slaw and homemade pickles.
